The one thing I’ve had trouble finding well-veganized is pizza; and it’s something I crave a lot! So I was very excited when the August 2011 issue of VegNews had a recipe for Vegan Deep Dish Pizza. Verdict? Not bad at all!
The deep dish version was a bit too carb-heavy for me, so the second time I made it into a thinner crust pizza by spreading the dough into a large rectangular pan rather than the 12″ cake pan called for. Next time, I’ll also try some new pizza toppings and throw some sauce on top for a yummier visual effect since cashew cheese, though delicious, doesn’t melt in as ascetically an appealing way.
