The appearance, consistency, texture is very much like tuna salad. Taste is very reminiscent too, just not fishy which is a plus! The “replacement” for the tuna was ground-up pre-soaked raw almonds and raw sunflower seeds.
This “boat” version wins out of the three because it’s easy to eat and a good ratio of UN-tuna to cucumber. I think presentation-wise it looks nicest too. Agree?
Un-Tuna Salad in Cucumber ‘Wrap’
This is something new I learned from a friend. You hollow out the cucumber to make room for the filling. Way low-cal versus a wheat wrap and I think it’ll be a good “sandwich” to take hiking since it can’t get squashed! You can also layer it with different fillings so each bite is a new surprise!
Presentation-wise though, it loses. And the balance is a bit off with too much cucumber per bite. But I did try one filled with leftover shredded coconut“>Potato-less Mashed Potatoes and that was much better since that filling is so powerful that the cucumber succeeded in tempering the taste exactly right.

And here’s another take that would make nice finger food for a party. I like the presentation, but it’s not eater-friendly without a utensil to hold the stuff inside. Maybe some experimentation would lead to a solution for making the filling more solid or sticky.
