Vegan Tomato Grilled Cheese (v)
After a week away from home and little energy to do real grocery shopping or cooking, this looked like it’d be little work for big taste. I was right, especially if you add my secret ingredient! What’s your quick-fix meal?

(original) Recipe from VegNews Vegan Tomato Grilled Cheese magazine. (serves 1)
1/2t + 1T non-hydrogenated margarine (like Earth Balance), softened and divided
3 thick slices tomato
1 slice red onion
2 slices multi-grain sandwich bread
1/2c Daiya Cheese Vegan Tomato Grilled Cheese
(optional and my “secret” ingredient) Amore Italian Garlic Paste Vegan Tomato Grilled Cheese

  1. Over medium-high flame, heat cast-iron or non-stick griddle. Add 1/2 teaspoon margarine and lay tomato and onion on the surface to cook.
  2. Spread remaining margarine on outer sides of the bread. And spreak insides of bread with garlic paste. Lay the slices of bread side-by-side on the griddle with margarine side down and top each slice with 1/4 cup of Daiya cheese.
  3. Lay the tomato and onion slices on the open face of one piece of bread. Once cheese begins to melt, combine the two sides and cook until both sides are lightly browned.
  4. Slice in half and enjoy! Delicious with a side of tomato-based soup.
